New Years will be a little less crowded than Mardi Gras, depending on which day during Mardi Gras you were down there.

We go friday, saturday & sunday of mardi gras. It was friday night IIRC. They were rolling a dude out on a stretcher behind the horse. He was all messed up.
A little less crowded would be great. Mardi Gras is stupid packed.

Should be less crowded than at night on Mardi Gras weekend. I don't know if I've been in the Quarter on that Friday in the past 10 years or so, but I've been down for Bacchus and Endymion on Saturday and Sunday and it's usually more crowded than New Years is.
First off, don't ever even think about coming close to a cop's horse on Bourbon Street. You will find your ass in jail. Bottom line. You can basically do anything else on the Street, hell, shoot someone, and be fine, but do not screw with a horse. Don't even come close to it.
Beyond that, I honestly can't offer much advice about the FQ. Locals avoid it, unless we go their for festivals or we are going to a particular restaurant. That's it. Nothing else. Bourbon Street is basically never seen by locals. We avoid it at all costs.
There are great hotels in the FQ and great restaurants for people coming into town. Unless, you are young, stay away from Bourbon. Got to Uptown. Take the Magazine bus or taxi and enjoy Uptown, or go into Mid-City. Walk the short distance into Frenchmen Street at night, and the Marigny and the Bywater during the day. In addition, great restuarants are in the CBD/Warehouse District. Probably the best in the city, IMHO. And right near the FQ. Places like Cochon, #1 on my food list in the city.
In other words, get the hell out of the FQ!
